With some of Europe’s hottest summer temperatures, the Greeks have perfected the art of summer dinner. Of course you’ll have to try an authentic version of one of their most famous culinary exports: horiatiki, more commonly known abroad as Greek salad. Their delicious salty cheese also features in other summer dishes like piperies gemistes me feta (peppers stuffed with feta) and garides saganaki, (shrimp with tomatoes and feta). Find a hidden outdoor terrace overlooking the sea and order up a variety of above along with some sardeles ladolemono or tiganites (marinated or fried sardines) and briam (mixed boiled or baked vegetables and tomato sauce), tzatziki (yogurt and cucumber dip) and melitzanosalata (eggplant and parsley dip), a glass of local white wines like a fruity Malagouzia or crisp Assyrtiko and you’ve got your perfect Greek mid-summer night evening.

Bella Italia can get very hot in summer, as such Italians tend to go for cold dishes at mealtime. This can often consist of an assortment of grilled antipasti with cheese and cold cuts. Since succulent tomatoes are abundant in summer, seek these out in whatever form you can. Scan menus for a simple friselle con pomodori, dried bread with fresh tomatoes, basil, olive oil and salt or the similar panzanella. Spain

The Spaniards also know how to keep cool in summer through their cuisine. One of the country’s best known dishes, gazpacho, is ideal for those sweltering long days on the Iberian Peninsula. Made from tomatoes, red peppers, garlic, onions and virgin olive oil, this chilled soup is both refreshing and satisfying. You might also come across salmorejo, a more simple cold soup consisting only of tomatoes, garlic, olive oil and crushed dried bead and can often be topped with ham or crumbled hard boiled egg. You could also subsist extremely well on a range of cold tapas like boquerones (anchovies, marinated or fried), octopus or other seafood to be sampled alongside some sparkling cava or tart Rias Baixas white wine.

Malta

In the heart of the sunny Mediterranean, the islands of Malta embrace summer to its fullest, especially via their summer village festivals. During these lively events of folklore, fireworks and processions, you can expect to find some tasty street foods such as imqaret (date pastries) and qubbajt (nougat). Keep well sated at midday over a dish of kapunata, made from fresh tomatoes, capers, aubergines and green peppers. Other summer favorites include pastizzi, a savoury pastry filled with ricotta or mushy peas, ross fil-forn, (baked rice) and imqarrun (baked macaroni).

France

The French love their salads and these are even more popular in summer. If you are holidaying in the Loire Valley, you have to try some of their delicious goat cheese in a chèvre chaud salad or down in the Cote d’Azur a salad Nicoise (with tuna, eggs, tomatoes, capers and anchovies), is a must. While in the south you may like to order a pissaladière (a golden onion, anchovy and olive tart), ratatouille with fresh summer vegetables or bouillabaisse, a fish soup from Marseilles. Alternatively enjoy many light meals or picnics by stopping off at a local farmers’ market for some homemade paté, rillettes, tapenade, cheese and array of seasonal fruit like apricots and flavor popping mirabelle plums.

England

While England isn’t as hot as many other European countries, it is still a popular destination in summer and one with delightful season specialties. The classic cucumber sandwich is perfect for a light leisurely lunch in a bucolic English country garden. In the evening you could sample some seasonal English Lamb with new potatoes or fresh citrus and mint marinated courgettes. For a more elaborate dish you could opt for some summer roast beef with watercress or sautéed scallops with herby dressing and roasted artichokes drizzled in a tarragon vinaigrette. With the abundance of tart fresh berries, finish off with an Eton Mess (berries with meringue and cream) and one mustn’t forget to sip on a refreshing glass of Pimms.

Known for its heavy meat dishes, which locals do also often eat in summer, the land of green valleys and the sound of music does have a few delectable seasonal dishes. For example, you may spot chanterelle mushrooms on menus, perhaps served roasted or in local antipasti plates along with smoked cheese. For a classic summer salad, try a rindfleischsalat, a beef salad with potatoes, red onions, radishes and lamb’s lettuce. It’s an excellent time of year to enjoy Austria’s many wonderful white wines like Grüner Veltliner, Niederösterreich Riesling, or Vienna’s Wiener Gemischter Satz DAC.

Switzerland

Switzerland is absolutely stunning in summer and makes for a perfect escape, particularly for nature lovers. Freshwater fish is a summer highlight, you could even cast a line into one of the country’s pristine lakes yourself or try to find some freshly caught perch on the menu of outdoor restaurant terraces with the view of the spectacular mountains. Locally grown strawberries, cherries and apricots are the perfect snack on an afternoon of hiking or hopefully you can happen by a kiosk selling artisanal ice cream made from the milk of those cows grazing in the clean, green meadows. On summer evenings the Swiss tend to dine on a light ‘café complet’, comprised of a loaf of Swiss bread, creamy local butter and cheeses, a variety of cold cuts as well as jams, honey and a hot beverage of tea and coffee.

Klosters, Switzerland

Swiss charm, fabulous skiing and jewelbox chalets, there are many reasons to love this traditional village resort, a favorite of our expert James Palmer-Tomkinson. “In the past it was the resort of choice for Hollywood movie stars and although they have since moved on, the cache of Klosters remains,” explains James. “Visitors now prefer it for its discreet and low key ambiance, a complete contrast to the more flamboyant resorts like St Moritz and Gstaad. The French Alps have dozens of resorts, but our Alps expert Andy Castle of Ultimate Luxury Chalets adores the Val d’Isère. This former traditional farming village nestled in the Tarentaise Valley close to the Italian border, has become one of the world’s premier ski resorts.

Home to the the Espace Killy ski resort, it also incorporates the neighbouring high altitude station of Tignes, bring together over 300km of pistes, elevating to heights of over 3500m. In addition, the area’s off-piste terrain is both thrilling and easily accessible by some of its 94 ski lifts. New to these this season will be the state-of-the-art Solaise gondola, which will replace the old Solaise Express chairlift.

If your bones aren’t too weary from your physical exertion, discover some of the resort’s superb après ski bars and restaurants. On the whole, these tend to be a much better value for luxury than some of the other high end resorts of the Alps.

Wanaka, New Zealand

Situated almost in the centre of New Zealand’s South Island, Wanaka offers some of the country’s best skiing and snowboarding. The lakeside town, abuzz with life, restaurants, bars and boutiques, acts as the gateway to the Southern Alps and gorgeous Mt Aspiring National Park.

Verbier, Switzerland

Verbier is another wonderfully charming and luxurious resort in the Alps and where Marina Gratsos of Carpe Diem Luxury Travel hits the slopes. Cradled in the southwestern Swiss canton of Valais, it’s considered one of the world’s top “off-piste” resorts.

Verbier sits at 1,500m in a sunny, south-facing valley with spectacular panoramas of the surrounding summits. It’s also the largest and most popular resort of the Four Vallées ski region, connecting with other resorts including Nendaz, Veysonnaz, Thyon and La Tzoumaz. The town is filled with impressive luxury chalets. While it’s a better destination for intermediate and advanced grade skiers, it does have some beginner slopes.

Try to book your trip during one of Verbier’s many annual events like the Freeride World Tour, Xtreme Verbier, held at the end of March. Gastronomes must book in at the restaurant of the Chalet d’Adrien, the town center’s only Michelin Star which offers delicious locally inspired dishes and fabulous views.

Telluride, Colorado, U.S.A.

North America’s Rocky Mountains offer some exceptional skiing surrounded by jaw-dropping views of the snowy mountain tops. Queenstown, New Zealand

On the other side of New Zealand’s Southern Alps, Queenstown is another skier’s paradise. A short 20-minute drive from this picturesque town on Lake Wakatipu, the Queenstown ski fields are spread over four resorts. There’s terrain for all abilities and styles from well-groomed runs to daring off-piste zones. For the more adventurous, heli trips can transform the Southern Alps into an endless, thrilling playground.

St. Moritz, Switzerland

A roundup of favorite ski resorts wouldn’t be complete without glitzy St. Moritz, the go-to European resort of Sylvia Delvaille Jones of Villas and Apartments Abroad. Schloss Kogl Castle – Near Salzburg, Austria

It’s hard to top the fabulous Christmas spirit of Austria. Visitors are treated to some of the best Christmas markets in Europe, plentiful meals of hearty Austrian specialties and graceful Christmas concerts in quaint local churches. You can make the most of this festive ambiance in the picturesque Salzkammergut area, near Salzburg. Our expert Monika Mayr-Melnhof of Schloss Kogl castle, gives us some further tips.

“Of course, Salzburg has a wide variety of events and some excellent Advent markets, however, there are some exceptionally charming markets in nearly every village in the Salzkammergut,” says Monika. “The ones I like most are around the lakes like in St.Gilgen, St Wolfgang and Strobl.

“From November 20th to December 20th 2016 you can enjoy the Advent of the Villages event which takes place in the six villages of Fuschlsee. The weekends feature additional events like concerts and sleigh rides. St Wolfgang has some fabulous festive spirit around the market, plus you can also take boat rides on the lake.”

St-Tropez is one of the chicest places to take in some fabulous holiday ambiance along the Mediterranean. West Cork Retreat – Glengarriff, Ireland

If you’re looking to retreat to the country for the holidays, you’ll have perfect seclusion and an abundance of old world charm at the luxurious West Cork Retreat, available through Elegant Ireland. Available through Loyd & Townsend Rose, this fully staffed 18th-century manor is only a one-hour train ride from London (Paddington Station). The current Georgian house was built in 1785 on the site of an Elizabethan house that had been badly damaged by fire. It can comfortably accommodate up to 14 guests in eight luxurious double bedrooms. There is also additional accommodation for staff and domestic offices. The classic and refined interior rooms feature beautiful mouldings, like the beautiful examples adoring the chimney breast above the fireplace in the dining room.

The elegance is carried over into the gorgeous gardens and parkland surrounding the house, secluding it from the nearby thriving and historic market town of Faringdon. A stroll of the grounds will grant you magnificent panoramic views of the valley or the fine lawns towards Faringdon Church. Nestled on the grounds, you can seek out the orangery, a walled garden, the orchard and lake with its boathouse. You can also explore them on horseback as the estate has extensive stabling for horses, should you wish to bring any.

The manor and the area are an idyllic place to spend Christmas or New Year and celebrate the festive period. Plus it’s an excellent base for exploring Oxford (21 miles away) and Cirencester (20 miles).
